I am almost always in charge of bringing dessert to our family functions so I am always looking for easy but pretty desserts. My friend, Claire, made this amazing pound cake for a baby shower we co-hosted and it was AMAZING!!! So I just decided to spring it up a bit for Easter 🙂
SOOOOO, first things first you need to sugar a bundt pan.
Next, mix up this tasty pound cake batter.
Claire’s Pound Cake
- Ingredients:
- 1 cup margarine, room temperature (you can sub crisco just follow package directions for substitution)
- 1 stick butter, room temperature
- 8 oz cream cheese, room temperature
- 3 cups of sugar
- 3 cups of all purpose flour
- 6 eggs
- 1/2 tsp vanilla extract ( I use 1 tsp)
- 1/4 tsp salt
Cream together margarine, butter and cream cheese. Add sugar until just blended. Mix in flour and eggs. Once all is incorporated add in vanilla and salt.
Pour batter into sugared bundt pan and place into COLD oven.
Turn oven to 300 degrees and bake for 90 minutes. Sometimes mine needs a little longer than that (I think it’s my oven) but if that happens just put some foil over the top of the bundt pan (so your cake doesn’t burn, and add a few more minutes.
Once the cake has cooled, turn cake onto a cooling rack and let it cool completely.
Now for the fun part…decorating. This is super easy. These Wilton candy melts are very easy to work with.
Just pick the color or colors you want to use and follow the melting directions on the package. Once the chocolate is melted use a spoon to drizzle it over the pound cake.
Just keep layering until you like the way it looks. 🙂 I originally had picked four colors but I loved the way it looked with just three so I ditched the purple.
And there ya have it… A super easy, super pretty Easter/Spring dessert. ENJOY!

(90 minutes is what the original recipe given to me says but almost every time I make this pound cake it takes longer. So if this happens to you just place some foil over the cake in the oven and let it continue baking until it’s done 🙂
