I heart a delicious sugar cookie, but truly I am not such a big fan of the whole making a bunch of icing and having to make all the different colors and dealing with multiple piping bags, etc. Enter Easter egg doodle cookies! All the yumminess and fun but minus some of the stress. Only one color of icing and the kiddos can get involved in decorating! All pluses in my book.
Here’s the How To:
I whipped up a batch of sugar cookie dough and cut it into egg shapes using a large cookie cutter. (Sugar Cookie Recipe listed at the bottom of this post). My sweet friend Vicki gave me this recipe and it is my favorite for a few reasons: 1) You don’t have to refrigerate the dough (I am kind of impatient :/) 2) The dough doesn’t spread much so your cookies hold their shape when baking 3) It is super easy and not many ingredients.
After you have cut out your cookies, place them on a cookie sheet lined with parchment paper and bake.
Make sure you let the cookies cool COMPLETELY or else your icing is just going to melt off.
Next up, ice the cookies using white royal icing. (I used a recipe from The Sweet Adventures of Sugar Belle and tried my best to follow her directions on how to ice) It’s pretty obvious I am not a professional at this! hahaha
Let the iced cookies sit over night. You want to let that royal icing really set up. And now for the super fun part!!! Using food coloring pens (you can get these at Hobby Lobby, Michael’s, local bake shops or Amazon) doodle away!!! H thought it was sooooo cool that he got to draw on a cookie!!!
I cannot get over the cuteness!!! Honestly I think I had as much fun or more than Hayes did! Hahahaa!
Vicki’s Sugar Cookie Recipe
- Ingredients:
- 1 cup of unsalted butter, at room temperature (I personally like to use salted:)
- 1 cup of sugar
- 1 egg
- 1 teaspoon vanilla extract (or almond)
- 3 cups of all purpose flour
- 2 teaspoons baking powder
- Preheat oven to 400 degrees. Cream butter and sugar together. Add egg and vanilla. In a separate bowl mix flour and baking powder. Slowly add dry ingredients to wet ingredients. Bake 8-12 minutes until golden.
